It’s not making any sense, I have the “Join AzureAD” task configured for dozens of clients but it only works correctly for a handful. (and even those ones it stops working for regularly) Does anyone have a video or step by step guide on how it’s supposed to be configured? Because I’m at my wits end here.

Unfortunately AzureAD is just the type of thing that can be very different from tenant to tenant. This guide should help you understand most of the issues, but it’s ultimately a learning curve in understanding how Microsoft bulk enrollment works, and what policies/configurations you have set up that might affect it.
